We had a wonderful time picking olives with the students. The kids worked hard and had lots of fun climbing in the olive trees. The olive tree is a symbol of the Savior and we are the olives. The olive branch is a symbol of peace and the olive wood is a dense, strong, reliable hard wood.
An olive off the tree is VERY bitter, unrefined just like the natural man. We harvested a giant container of olives. They were washed and scooped out ready to be pressed and made into something useful.
This is the giant stone used for bruising, ripping and crushing the olives. Everything is so symbolic, it is amazing.
Ideally it takes 4 people to move this stone.
The olives are being pressed into a mush.
After you have a nice mushy pulp you scoop it out and put it into hand woven baskets to be pressed. John is showing off an empty basket.

They have two different styles of presses. This is the cork screw press. You stack multiple baskets on top of each other then you tighten down the screw. What comes out of the green olives is a reddish brown mixture.

This is another type of press. It is a weighted lever press.
At each press once the pulp has been pressed the oil is separated out and runs into a holding vessel that once filled sends the finer or lighter oil into a second holding vessel. By time it gets to the end it is pure and clean with a light green glow. Perfect Christmas colors, from blood red to green, the color of life.
I just love the pomegranate! Another amazing symbol to learn from.
